Holiday Brussels Sprouts

If you claim to not like Brussels sprouts, it's because you've never had them like this! Debbie Matenopoulos shares her favorite way to prepare these veggies with a recipe that'll be a hit with all your guests this holiday season!

Thanksgiving Brussels Sprouts

Ingredients:

1 stalk of Brussels sprouts (or 2lbs loose if you can’t find)

1/2 cup Extra virgin olive oil

2 tbsp kosher salt

1 tsp pepper

2 sprigs rosemary

1/2 cup balsamic

1 tbsp honey Dijon

1 cup olive oil

1/2 cup pine nuts

1 block parmesan or 1 buy pre shredded parmesan

 

Directions:

1. Preheat oven to 400 degrees.

2. On a sheet tray, line with parchment paper.

3. Generously coat the stalk of Brussels sprouts with olive oil, salt and pepper.  Place the rosemary under the Brussels sprouts so it steams into them.

4. After 30 minutes, check and rotate. Continue to rotate them until all sides are cooked and golden brown.  

 

For balsamic dressing:

1. Combine balsamic and mustard, then, drizzle the oil in slowly while whisking. 

 

Plating Instructions:

1. On a Platter, place the stalk of Brussels sprouts and drizzle balsamic over the whole stalk. 

2. With a peeler, peel shavings of parmesan over the top, following with pine nuts.
