Healthy Garlic Mushrooms

The Power of Garlic

Mahaila McKellar

Yield: 4 side dishes or up to 8 servings if used as garnish

 

Ingredients:

4 teaspoons chopped organic garlic. (about 4 cloves)

1 pound mushrooms, sliced

4 tablespoons organic unsalted butter, from pastured cows

1/4 teaspoon sea salt

1/4 teaspoon organic ground black pepper

1 teaspoon fresh organic thyme, leaves only

1 teaspoon fresh organic parsley, leaves only, chopped

1 tiny pinch fresh organic rosemary, minced

 

Directions:

1. Begin by peeling and chopping the garlic.

2. Next slice the mushrooms and prepare the herbs.

3. Heat a large skillet over low heat.

4. Melt the butter in the skillet

5. When butter is just beginning to sizzle (this will take a while because you want to keep the heat low), add the mushrooms.  Cook and stir for 4 or 5 minutes.

6. Add the salt, pepper and fresh herbs.  Stir and cook another 3 or 4 minutes.

7. Enjoy!

 

Notes:

1. To get the most nutritional benefits from the garlic, get a fresh unbleached garlic bulb, with the roots attached, and chop your garlic cloves yourself.

2. Start the recipe by cutting the garlic to get the most health benefits from it.

3. Use your favorite fresh mushrooms.  I've made this recipe with white mushrooms, cremini mushrooms, shitakes and baby bellas, and it's always been delicious.

4. If you don't have fresh herbs, you can use dry herbs.  Reduce the amount to 1/3 of the fresh (1/3 teaspoon thyme, etc.)

5. If using salted butter, reduce or eliminate the added sea salt.

I used to struggle with peeling garlic. I got one of those tubes for peeling garlic and it works like a charm. Thanks for the great tips. I will look closer at what I buy.
