Best Lentil Soup

30-Minute Lentil Soup

Jamie Tarence 

 

Ingredients:

Trader Joe’s Steamed Lentils (17.6oz)

Mirepoix (Chopped celery, carrots, and onions) 6-8 oz.

2 TBSP Extra Virgin Olive Oil 

Kosher Salt + Pepper

Italian Dressing Mix 

Roasted Red Pepper and Tomato Soup (32 oz) 

Fire roasted tomatoes 14.5 oz

Chicken bone broth (10-17 oz)

 

Directions:

1. Add 2 TBSP Olive Oil to a large pot or Dutch Oven over medium heat. 

2. Sauté Mirepoix for 3-5 minutes. If you prefer creamier soup, you can puree the mirepoix first.  

3. Add your steamed lentils and mix into the mirepoix.  

4. Season with kosher salt, pepper, and 1 – 2 TBSP of Italian Dressing Mix. 

5. Add Roasted Red Pepper and Tomato soup and can of diced Fire-Roasted tomatoes and mix well. 

6. Add Chicken Bone Broth and bring to a boil. You can add less bone broth for a thicker soup if you prefer. 

7. Lower heat and simmer for 20 minutes. 

8. Serve with your choice of bread & enjoy!
