Sweet Potato Casserole

Yields: 4-5 Servings 



1 ½ lb. (5-6) Sweet Potatoes – Steam in bag or boiled 

4 Tbsp Unsalted butter, 2 Tbsp melted and 2 softened 

¼ Cup 2% milk 

1 Tsp Cinnamon Sugar 

1 Tsp Vanilla 

1 Tbsp Brown sugar 

Pinch of Kosher Salt 

½ Cup Mini-Marshmallows  

½-1 Cup Granola (I use crushed Honey Oat Kind Bars) 



1. Preheat the oven to 350 degrees.

2. Steam or boil sweet potatoes. 

3. Place sweet potatoes, 2 Tbsp of melted butter, milk, cinnamon, salt, and vanilla in a mixing bowl and mix until fluffy (30-90 seconds).

4. Spray baking dish and spread sweet potato mixture. 

5. In a separate bowl, crush the granola bars. 

6. Add 2 Tbsp of softened butter to the granola bars and mix well. 

7. Add mini marshmallows to the granola mixture.

8. Spread the granola mixture evenly on top of the sweet potatoes. 

9. Bake for 20-25 minutes until golden brown.
