Apple Pie Sundaes

Apple Pie Sundaes

Yield: 8 servings

 

Ingredients:

  • 2 tablespoons Butter
  • 4 Granny Smith Apples, peeled, cored, and chopped
  • 1 teaspoon Ground Cinnamon
  • Pinch Ground Cloves or Nutmeg
  • 2 tablespoons Sugar
  • 2 tablespoons Brown Sugar
  • ¼ teaspoon Kosher Salt
  • ¼ cup Apple Cider
  • 1 tablespoon Cornstarch + 2-3 tablespoons Water
  • ½ teaspoon Vanilla Extract
  • Vanilla ice cream, for serving

 

Directions:

  1. Heat butter in a stock pot until melted (for deeper flavor, continue cooking the butter until it browns).
  2. Add apples, stir to coat in butter.
  3. Sprinkle cinnamon, cloves (or nutmeg,) and salt over apples, stir to combine.
  4. Add sugars to pot, stir to combine. Increase heat to medium-high and cook until sugar is syrupy.
  5. Add apple cider to pot, stir to combine.
  6. Put a lid on the pot and cook over medium-low heat until apples are tender (4-6 minutes).
  7. In a separate bowl, whisk together cornstarch and water. Add the slurry to the pot of cooking apples and stir to combine.
  8. Cook until thickened, 1-2 minutes.
  9. Remove from heat and stir in vanilla extract, then set aside to cool.
  10. Spoon apple pie filling over ice cream.
