Sugar-Free, Low Carb Jam

“Sugar-Free Blackberry Jam with Shirley”

INGREDIENTS

 

12 oz of blackberries

1/3  cup of Allulose sugar substitute (or to taste)

2 Tbsp Lemon juice (bottled or fresh)

1/4 tsp of Xanthan  Gum

2 Tbsp of water

 

OPTIONAL- Pinch of salt

 

INSTRUCTIONS

 

-Place blackberries, allulose, lemon juice, and water in heavy bottom pan.  Add a pinch of salt and Cook on medium heat for 8 to 10 minutes

 

-Smash the blackberries into small pieces with the potato smasher.

 

After 8-10 minutes,  whisk in 1/4 teaspoon of xanthan gum to help further thicken berries for another 2 minutes

 

-Take the cooked berries off the heat and allow to cool for an hour or two.

 

-Fill small glass jars with homemade, sugar-free jam!

Place in refrigerator. The jam will stay fresh up to 7 days!
