Dynasty Corn Pudding

Dynasty Corn Pudding

Yield: 10 Servings

 

Ingredients: 

3 C frozen corn kernels, slightly thawed

½ C butter, melted

2 Eggs

1 C sour cream

1 Heaping C Pepper Jack or Monterey Jack cheese

½ C cornmeal

⅓ C jalapeños, diced 

½ Tsp salt

½ C shredded parmesan cheese

 

Directions: 

1.     Preheat oven to 350 degrees.

2.     Add 1 C frozen corn, melted butter, and 2 eggs into a food processor and puree until smooth.     

3.     Transfer the puree to a mixing bowl and add remaining frozen corn, sour cream, pepper jack cheese, cornmeal, diced jalapeños, and salt and mix well.   

4.     Generously spray or butter 9 x 11 or 11x 13 baking dish.     

5.     Pour into the prepared baking dish and spread evenly.        

6.     Sprinkle with parmesan cheese.        

7.     Bake for 30 minutes until golden brown.       

8.     Let cool for 10 minutes and serve. 

Note: You can make this ahead and bake the next day. You’ll simply pause at step 6 and cover with aluminum foil or secure lid and refrigerate for up to 48 hours. When ready to bake, you’ll bake at 350 for 30-40 minutes.
