Chocolate Chip Banana Bread Bundt Cake

Debbie Matenopoulos takes banana bread to a whole new level with this elevated recipe that's prepared in a bundt cake pan and includes chocolate chips, brown sugar, and greek yogurt!

Chocolate Chip Banana Bread Bundt Cake

Ingredients:

1 Stick butter

2 Eggs

½ Cup Greek yogurt

1 Teaspoon vanilla extract

4-6 Ripened bananas (if you do not have ripened bananas, follow my tip in the video).

1½ Cup flour

¾ Cup brown sugar

¼ Teaspoon baking powder

1 Teaspoon baking soda

½ Teaspoon salt

1 Teaspoon cinnamon

1 Cup chocolate chips

Olive Oil (for greasing mold)

Powdered sugar (for dusting on top of cake)

 

Directions:

1. Preheat oven to 350 degrees F.

2. Cream together softened butter, brown sugar, eggs, and mashed bananas.

3. In a separate bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon.

4. Combine dry ingredients with wet ingredients. Take care to not over mix or you will have a drier tougher cake. Add vanilla extract, Greek yogurt, and chocolate chips.

5. Pour batter into the mold (Tip: before pouring the batter into the mold coat mold with a little bit of olive oil and flour or granulated sugar).

6. Bake in the oven for 55 minutes or until a toothpick goes into the center and comes out clean.

7. Let cool completely before trying to release cake from mold.

8. Tap mold on counter 3 or 4 times and run edge of butter knife around outside of the cake. Place a dinner plate on top of the mold and quickly flip the cake over onto the plate. Remove mold and slip cake onto cake stand or wire rack. Dust powdered sugar on top.  Enjoy!
