Jamie's New Year's Cornbread

Rich in flavor, New Year's Day cornbread is the color of gold and thought to bring fortune and wealth with each tasty bite.

Jamie's New Year's Cornbread

Ingredients:

Zatarain’s Cheddar Jalapeño Cornbread Mix 

1 Egg

½ Can Creamed Corn (7 oz) 

1-2 tbsp diced Jalapeños (Optional)

½ C of Milk 

 

Directions:

1. Preheat the oven to 375°F. 

2. Combine creamed corn, egg, diced jalapeños, and milk in a bowl and mix well. 

3. Add Cornbread Mix and mix until all is moistened. 

4. Add cheese and mix. 

5. Spray 9 x 11 baking dish or cast-iron skillet. 

6. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.  

 

Make Ahead & Freeze:

When freezing, allow the cornbread to cool completely in the baking dish. Flip the cornbread onto parchment paper and allow it to cool for an additional 30 minutes to an hour. Wrap parchment paper all the way around the cornbread and stick it inside a freezer bag until ready to serve.
