Cookie Dough Energy Balls

Debbie Matenopoulos' no bake, cookie dough energy bites are nutritious, wholesome, and full of goodness. AND THEY TASTE LIKE COOKIE DOUGH!

Cookie Dough Energy Bites

Recipe by: Dan Kohler

Yield: 16-20 Balls

 

Ingredients:

10 Medjool Dates, Pitted (~7 ounces)

1 cup Rolled Oats

1 cup Peanut Butter

2 tablespoons Honey

½ teaspoon Kosher Salt

½ cup Chopped Walnuts

¼ cup Cacao Nibs

 

Directions:

1. Pulse dates and oats together until finely pulverized.

2. Add peanut butter, honey, and salt, then pulse in food processor until a pinchable dough forms.

3. Add walnuts and cacao nibs, pulse until just combined.

4. Scoop dough into small balls (~2 tablespoons apiece).

5. Store in fridge until ready to eat.
