Black Bean, Corn, and Feta Dip

Your tailgate party will be a touchdown with Jamie Tarence's flavorful dip.

Black Bean, Corn, and Feta Dip

Ingredients:

3 cans black beans, drained and rinsed

3 cans white shoe peg corn, drained

1 bunch of scallions, thinly sliced

1 TB fresh cilantro, finely chopped

8 ounces feta, crumbled

¾ Cup sugar or sugar syrup

¾ Cup Apple cider vinegar or white balsamic vinegar

¾ Cup Avocado Oil - You can use EVOO if you prefer

Optional: Garlic Powder to taste

 

Directions:

1.     Whisk the oil, vinegar, and sugar syrup together. If you use regular sugar, I recommend shaking it all in a jar or using a food processor to allow the sugar to fully dissolve.       

2.     Mix the black beans, corn, scallions, feta, and cilantro in a large bowl.       

3.     Pour small amounts of the dressing over and stir until the dip is lightly coated but not drenched.           

4.     Chill until serving time. Serve with tortilla chips or Fritos scoops.
