Boursin Potato Casserole

Jamie Tarence is putting a spin on traditional mashed potatoes with her savory potato casserole that is perfect for the holidays.

Boursin Potato Casserole

Ingredients:

2 C Heavy Whipping Cream

5.2 oz. Boursin Garlic & Fine Herbs Cheese

2 Tbsp Minced Shallots

2 ½ lbs. New Red Potatoes, scrubbed

2 Tbsp Chives

2 Tbsp snipped Parsley

Salt & Pepper to taste

 

Directions:

1. Preheat oven to 400 degrees.

2. Boil or steam your potatoes in lightly salted water.

3. While potatoes are boiling, heat cream, cheese, shallots, and garlic over medium heat. Stir occasionally until the cheese is fully melted.

4. Slice potatoes and arrange half in a greased 9 x 13 baking dish.

5. Pour half of the cheese mixture over potatoes and sprinkle with chives.

6. Add the remaining potatoes for a second layer and cover with the remaining cheese mixture and chives.

7. Bake for 45-55 minutes until tender and crispy.

8. Top with fresh parsley and enjoy!
