Summer Salad

It is summer in the South and Jamie Tarence is sharing her go to salad, a gorgeous and fresh tomato, cucumber, and onion salad with homemade dressing. It's the perfect make ahead side for all your summer BBQs and parties.

Summer Salad 
Jamie Tarence 
 

Ingredients: 
2/3 C extra-virgin olive oil  
5 Tbsp red wine vinegar 
1 Tbsp Italian herb blend 
1 Tsp kosher salt 
½ Tsp ground black pepper 
Pinch of red pepper flakes (Optional – adds a kick) 
3 Large Beefsteak tomatoes, cored and cubed  
1 Medium red onion, halved and thinly sliced 
1 large seedless cucumber, peeled and quartered lengthwise 

Directions: 
1. Mix red wine vinegar, extra-virgin olive oil, kosher salt, pepper, and Italian seasoning until well blended.  
2. Mix your cucumber, tomatoes, and onions into an air-tight container.  
3. Pour your dressing over the mixture and give it a store so that all pieces are well coated. 
4. Place your lid on your container and shake or turn the container a few times to ensure that all pieces are well coated.  
5. Place it in your fridge overnight until you’re ready to serve so the flavors can marinate.  
6. Serve as an appetizer with your favorite chips or pita bread or as a side dish for your meal. 
 
If red onions have too much of a kick, you can use my tip to remove the overpowering taste before preparing the recipe.
