Greek-a-mole

So, you LOVE guacamole…What about Greek-a-mole? Debbie puts a Mediterranean spin on the classic by adding crumpled feta, flavorful olives and Greek spices.

Ingredients:  

4 large avocados 

½ cup Greek yogurt 

4 tsp lemon juice  

1 tsp salt 

1 tsp pepper 

1 tsp flat leaf Italian parsley, finely chopped 

¼  fresh jalapeno optional or ½ tbsp pickled hot and sweet jalapenos 

1 cup cucumber, peeled and finely chopped 

1 cup red onion, finely chopped 

3 large tomatoes on the vine, finely chopped 

½ cup kalamata olives, pitted and chopped 

1 cup feta cheese crumbled 

 

Directions: 

1. Pit and hollow out 4 large ripe avocados , add greek yogurt, lemon juice, salt, pepper, mash until well combined. 

2. Stir in the cucumbers, red onion, tomatoes, kalamata olives, feta cheese, flat leaf parsley, and jalapenos optional. Garnish with additional feta cheese, black olives, and a drizzle of Greek olive oil if desired. Serve with sliced red and orange bell peppers, carrots, cucumbers, and of course tortilla chips.
