Homemade Pimento Cheese

Homemade Pimento Cheese

Ingredients: 
1 (8 oz) block sharp cheddar cheese 
1 (8 oz) block extra sharp cheddar cheese 
1 cup Mayonnaise 
4 oz jar pimentos (do not drain) 
1 Tbsp Worcestershire sauce 
1 Tbsp diced shallot or onion 
½ Tsp Red pepper flakes, optional 

Directions: 
1. Grate the sharp cheddar block of cheese on the larger shredding side of your box grater. Grate your extra sharp cheddar cheese block using the smaller shredding side of your box grater. I recommend wearing gloves to protect your hands. 
2. In a large bowl, combine your grated cheeses, mayonnaise, diced shallots or onions, Worcestershire sauce, red pepper flakes, and diced pimentos. Mix with a spoon or using your hands until well incorporated. 
3. Refrigerate until ready to serve. It can be kept in the refrigerator for up to two weeks.  
4. Serve with your favorite crackers, Conecuh sausage, and Wickles for an incredible crowd pleaser or make a pimento cheese sandwich for a quick lunch!
