Savory Bread Pudding

Debbie Matenopoulos' comforting make-ahead savory bread pudding (also known as strata) is loaded with sausage, veggies and cheese. You might want to double the recipe so you're guaranteed leftovers.

Ingredients:

Butter for the baking dish

3 tablespoons extra virgin olive oil

10 ounces oyster, cremini, or other mushrooms, sliced ½-inch thick (no stem)

1 large yellow onion, minced

1 cup finely diced broccoli

Sea salt

2 cloves garlic, smashed, minced, and peeled

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes

1 1/2 Tablespoon Dijon mustard

6 large eggs

2 1/2 cups half and half

12 ounces sourdough cut into cubes with crust

2 cups grated Gruyere or Swiss Cheese

½ cup Parmesan

 

Directions:

1. Preheat the oven to 350 degrees F. Butter a 9 x 13-inch baking dish.

2. Set large skillet over medium heat. When hot, add 2 Tablespoons of olive oil and add the mushrooms Cook, undisturbed for 3-4 minutes, then flip and cook 2 - 3 minutes more. Remove mushrooms to a plate and sprinkle with sea salt. If the skillet is small do in two batches.

3. Reduce heat Add the remaining olive oil and sauté the onions. Cook approx. 2-3 minutes. Add garlic, sea salt, pepper, red pepper flakes, and finely chopped broccoli. Cook for 3 minutes more. Fold the mushrooms back in. Remove skillet from heat.

4. In a large mixing bowl, whisk the eggs and then whisk in the half and half, mustard and 1/2 teaspoon sea salt.

5. Scatter half the bread cubes in the baking dish. Pour half the egg mixture over top. Add half the vegetables and half the cheese. Top with remaining bread cubes. Add the remaining egg mixture, vegetables, and swiss cheese.. Press and toss gently with fingertips to combine. Top with parmesan cheese, and finish with black pepper and a sprinkle of sea salt.

6. Cover with foil and bake for 30 minutes. Remove foil and bake until filling is puffed up and bubbly and the top is golden with crisp edges, 15 - 20 minutes more. Cool 10 minutes, then serve.

7. Strata can be assembled up to 1 day ahead of time. Keep it covered in the fridge until you're ready to bake.
